Gujia is a ring-shaped pasta which has a long history and unique local characteristics in Jiangxian County. According to records, there was such food in Ming and Qing Dynasties. Legend has it that once upon a time, there was an extraordinary idler. His wife visited her parent’s home, fearing that he would be hungry, so she made a Gujia, hung it around his neck, and asked him to take a bite when he got hungry. Unexpectedly, he was too lazy to move the back part of Gujia to front for him to take a bite after finishing eating the front part. As a result, his wife came back three days later, finding that he had starved to death. Although it is a cold joke, it is enough to testify to Gujias long history. There are two kinds of Gujia. One is ring-shaped pasta with a diameter of one chi (Chinese unit of length), symbolizing perfection or reunion. The other is an about-40-centimeter-long pasta strip, implying smooth life. The shaped dough is firstly buried in the hot ash for about half an hour, which forms out of the plant fuel for cooking. Then it will be turned over and go through burial for another 30 to 40 minutes. Now Gujia is ready to be enjoyed after the ashes on it being removed, with the outside browned and inside soft. More and more fragrance will fill the mouth while it is being chewed. It is an excellent gift for children’s birthdays, engagements, and visiting relatives and friends.
